Having just come back from an OMazing yoga retreat in Mexico, I’m still channeling
those island vibes, so I whipped up this tropical mango-pineapple smoothie. With each sweet sip, I can almost hear the waves crashing again…
Besides being a mental vacation in a glass, this smoothie is packed with nutritional goodness. Pump up the IRON with spinach and chia seeds. Bask in essential fatty acids with these plus hemp seed milk, ground flaxseed, and coconut oil. Power up your potassium with banana and more chia.
Bonus tip! Since we’ve added chia seeds to this smoothie, let it soak in your refrigerator
10-30 minutes before consuming. Chia seeds will absorb liquids, plumping up for a texture that reminds me of tapioca pudding! You can play with adding more chia seeds for a thicker, pudding-like consistency.
A few slices of avocado would also work great blended into this smoothie – let me know if you’ve tried it!
1 c. spinach
2 c. hempseed milk
1 frozen banana
1 c. frozen mango
1 c. frozen pineapple
1/4 c. ground flaxseed
2 tablespoon chia seeds
1 tablespoon coconut oil
1-2 drops vanilla extract (optional)
